Super Quick Molten Chocolate Cake

I've been super busy with my home life lately and lots of stuff going on so I haven't been posting as much as I would like too. Hopefully I can hop right back on my baking blogger train and start sharing more delicious treats soon. Since today is February 29th I feel like I should have done something unusual but that's what happens when poor planning is involved. Anyway, lets get to the recipe!

Are you looking for a quick chocolate fix? Do you have a microwave? I have the recipe for you then. It's warm, molteny (technical term) and delicious. It's also perfect for one but big enough for two if you're feeling friendly. :). I only have one picture because I was distracted and sort of ate the whole thing before another picture could be taken...oops.

Caramel Cheesecake Chocolates

I saw the new cream cheese from Kraft in the store and thanks to the front of the package immediately thought of making chocolate truffles. I love chocolate truffles, all smooth and creamy. Who can resist...I mean really? I whipped up some of my homemade caramel sauce and put it all into a shell of chocolate that is completely irresistable. Unless of course you don't like caramel...or chocolate. That would be sad :(

Pecan Pralines for Mardi Gras

I tend to miss things like National Peanut Butter Day and the crazy holidays but this one I couldn't let pass without making something delicious and pretending I was there in a cozy cafe while the streets were still quiet. Most people are doing king cakes and beignets but I like to do things a little different :). These should be called Melt-In-Your-Mouth pecan pralines because they are so smooth and creamy and addicting. I won't even say how many I've eaten but it's a good thing my husband doesn't know how many the recipe makes so when he sees them he can't count how many there should have been :).

Meatless Mondays! Vegetarian Steamed Dumplings

I'm a huge fan of steamed dumplings. I think they're so much fun in their cute little pockets of delicious. My husband and I went to a local dumpling restaurant months ago and I still talk about how great they were. It's about a half hour away though and so we just don't make it to that side of town very often anymore. They made their dumplings from scratch (of course, and I should hope) and they were little pillows of yum. I could have eaten like 15 (but I didn't). So, were I'm going with this is that I made some at home that were also delicious!

Oatmeal Raisin Wanna Be A Larabars

If my terrible pictures entice you enough to read further, these are delicious. So much so, that my two year old gobbled one up immediately. They're sugar free (except for natural sugar in the raisins of course), quick to make, and store well. Oh and my favorite, you can change it up a little if you like it another way. Are you wanting to know more yet? Then keep reading :)

Whole Wheat Cinnamon Rolls

Anyone in the mood for breakfast food? Cinnamon rolls always do the trick with me. I love them pretty much any way you want to serve to to me. These are especially soft and delicious. I topped with with a cream cheese frosting so it would be more substantial than a "drizzle" although a drizzle is healthier for you this adds to the cinnamon roll eating experience to have the warm and smooth frosting dripping over the sides.

Red Velvet Brownie Hearts with Cream Cheese Frosting!

Yes! I know it's meatless Monday but it's also Valentine's Day tomorrow and I thought this would be a better post. I remembered a few days ago that I had this recipe and thought it would be a nice idea to share it with you. Of course it only makes enough so that it can be baked in a loaf pan because it is about romantic red velvet brownies and not gorging ourselves on a 9"x13" pan of yummyness.

Peanut Butter & Chocolate Chip Cookie Dough

I know what you're thinking. Is that spoon in there because she ate it from the bowl? Why yes it is. It was delicious. You know how regular chocolate chip cookie dough is grainy from the sugar? This isn't. It's completely smooth with the exception of the chocolate chips of course. It has a light peanut butter undertone and a hint of vanilla. Of course there's no eggs in it so you could eat the whole bowl with no worries, but it would probably be better to share :).

Lemon Curd Filled Heart Cookies

Did you save any leftover lemon curd from the Lemon Bar Cookie Cups? or...do you have some in your refrigerator that you want to do something with but aren't sure what? Would a buttery, melt in your mouth cookie stuffed with lemon curd do the trick? Yes, I think so. If you want to make these a day ahead and pop them in the refrigerator you can do that, or you can pop them in for 5 minutes then bake.

Lemon Bar Cookie Cups

Mmm...lemon :) That lovely tart and sweet in lemon curd is so delicious I had to talk myself out of eating it straight from the bowl...several times. These little cups of yum are pretty quick to prepare if you're looking for a treat or have guests coming over. There will also be some extra lemon curd left over which is never a bad thing, as I said, just don't eat it straight from the bowl as much as you want to.

Toasted Marshmallow & Chocolate Cupcakes

I thought these would be fun for a Valentine's Day treat. The recipe makes about 8 so it's a manageable amount that you won't have to be concerned with eating the whole batch. You could always give some to friends :). The frosting is light and fluffy just like a marshmallow with a hint of vanilla flavor so it pairs nicely with the rich chocolate cake that has an awesome thin crust on it.

Peanut Butter & Chocolate Heart Cookies

Peanut butter and chocolate is a common but wonderful combination. These little hearts will make anyone jump with joy when they see them. You could also bake the insides and outsides separately so they're more like puzzles, or just do the insides and have lots of small hearts for munching. In our house we love peanut butter and chocolate, not always together of course. But together isn't a bad thing :). The two tones on these cookies always add a bit of fun to a cookie tray.

Pecan Pie Toaster Pastries

I thought since I had been missing for a few days I would give you something special and fun :). My husband has been asking for pie and so this is pie...kind of. It would be a great dessert with some ice cream or a breakfast with some yogurt. All filled up with pecan pieces and yummyness (technical term). I was thinking of tossing in a few chocolate chips but I forgot. It didn't need them anyway.
