So I know I've been missing for a while.
It's been kinda crazy though with lots of stuff going on so I've been
constantly thinking about what to make for you all but not actually had the
time to make anything. Hopefully I can keep posting in a pretty regular basis
until I get less busy at home then I devote more time to delicious treats
again. On to the easy sandwiches!

Garlic Knots
I love bread so much that this blog
probably should have been about bread instead of desserts. Lucky for me I can
still write about bread on here and share it with all of you! None of you seem
to mind, after all :). I used to bake bread each week out of necessity because
of my sons soy intolerance and the price on bread without soy products. He can
have soy now and so I've become lazy in my bread baking. I really should make
it more often. If nothing else I will be making these more often because they
are done within an hour!

Inside-Out S'mores
Summer is pretty much here, at least
where I live. It's in the 80's everyday so it may as well be summer. I know it's going to get a lot hotter and it already is a lot hotter in some places. That means
sitting outside with friends and having fun. S'mores are part of summer fun.
The best part of these is that they can be made ahead and don't involve a flame
(although I'm sure you could if you wanted too). You could always roast actual
marshmallows and put them in between the cookies of course. That may be
delicious too. These involve homemade graham crackers (if desired) and brownie
cookies!

Meatless Monday! Corn & Avocados (and another recipe!)
Meatless Monday is here and you probably
thought I was going to skip it this week. I'm not, I'm here :). I wanted to
post these recipes but wasn't able to make them until umm today. So, I'm a
little late in posting but here it is! I'm posting both parts of the meal this
time instead of giving you one recipe then having you look at the picture and
wonder what the other stuff is or how to make it. The first recipe is obviously
the corn avocado salad but then second one is shrimp with an Asian barbecue
sauce. Yum!

Quinoa & Oatmeal Granola
I really love granola. One reason is that
there is so much you can do with it! I really like buying it in bulk bins so
that I can try a little of several kinds. When we lived closer to a Whole Foods
I really liked getting them there. Now we are only 20 minutes away but I still
don't get over there much and it's just as easy to make my own most of the
time. Then, I can add what I want to anyway :)

Soft Pretzels
Whenever I go somewhere and they have
soft pretzels I always want one. I love them, a lot. They're soft inside
with the crunchy exterior and a little salty, yum. These pretzels are
delicious. My favorite is the one covered in chopped candied almonds and dipped
in honey. I could have done it with all eight but I thought better of it
because then I would have eaten all eight. Gently warmed up honey would be
awesome with these but we didn't bother and they were still great.

Animal Crackers
Everyone
remembers animal crackers, especially the ones in the little red box with the
handle. These are like those but better! I made little elephants, lions,
and bears. I would have made giraffes but somebody with tiny hands grabbed my
giraffe cookie cutter and it didn't reappear until the next day. That's alright
though, these are adorable on their own. I made chocolate chip cookies also and
those were more of a hit than the original vanilla ones.

Meatless Monday! Whole Wheat Pizza Puffs
I love bread sticks and these remind me
of those. These are little puffs that taste like pizza crust and are filled
with cheese and vegetables. As you can see, the sauce is served on the side.
The great thing about these is you can probably slide in a lot of vegetables if
you want too. I managed to slide in broccoli and carrots. The carrots
look sort of like cheese :). You could always try grated squash or zucchini and
mushrooms! This would be lovely with a big salad on the side.

Hint of Mint Brownies
I really love mint desserts and
especially when they have chocolate involved. To much mint can be overpowering
though. These have a light mint flavor so if you want more then you can surely
up the amount of mint in the recipe. My husband said he could taste it when he
breathed in while he was eating them, that's how light it is. I'm pretty sure
using fresh mint you cannot "over-mint" this recipe. You could
probably double it and still be okay. Brownies for whatever reason are one of
my favorite desserts to make and that's what I tend to take to people's houses
when we visit, maybe it's that they are portable and individual servings
:).

Margarita Doughnuts
Seeing
as how this is my sixth doughnut recipe on here I would I'm a pretty big fan. I
kinda love them. This recipe is really similar to this recipe with a few tiny changes. What makes these
doughnuts special? The curd in the middle...margarita curd. It's made with lime
juice and tequila. These would make a lovely addition to brunch this Saturday
yes? Yes. I would call these alcoholic doughnuts but the alcohol content that
is in there is cooked out when the curd is cooked but the flavor is still there
though :). (I should say you can leave out the tequila if you want too and replace it with more lime juice). They are also rolled in granulated sugar mixed with orange zest
which makes them even lovelier.

Caramelized Banana Fluffernutters
I don't think I've had a fluffernutter
sandwich in years. I have some bananas and I was trying to think of something
fun to do with them besides eat them :), make muffins or bread, or put them
over pancakes. I came up with this idea and it was a great one, if I do say so
myself. It seems like I'm all about the caramelized food right now (I always
have been). We had this talk last week. What do you use to caramelize? butter?
Doesn't butter make everything better? Yes. :)
