Ricotta cheese is super easy to make and
very versatile to use in cooking. There are so many different dishes that it is
delicious in. I made ravioli and calzones with it and both of them were
awesome. As a bonus (I can't remember the math right now of course) I did do
the math and it was significantly less expensive to make my own ricotta cheese
than to buy the one in the store. It does take a little time but it also only
takes a little effort, and a timer is helpful (because I often get distracted).

Flourless Chocolate Cake Bites
A traditional flourless chocolate cake is
rich and dense when you have a bite. An 8" cake has been known to serve 16
people because it is so flavorful. This cake is one of my favorites and so I
wanted to find out what would happen when you baked it as mini cupcakes...you
should find out too, because it's worth it.

Meatless Monday! Easy Stuffed Mushrooms
I feel like mushrooms are
a mainstay in a vegetarian diet mostly because they have a "meaty"
texture to them in most dishes. I've loved mushrooms for as long as I can
remember, even before becoming vegetarian. They can be grilled, baked, broiled,
or cut up and sauteed. These are a simple stuffed mushroom that is great for a
quick weeknight meal.

Lemon Glazed Mini Doughnuts
Tiny doughnuts how I love them. I
consider these to be two bite doughnuts but I'm sure some people would just pop
them in and call it a day. That would be easy to do with their sweet lemon
glaze and fluffy cake-like texture. I may or may not have eaten about six of
them within 10 minutes of them coming out of the oven. Warm tiny doughnuts are
my downfall...

Peanut Butter & Banana Breakfast Cookies...a perfect take along treat!
Cookies for breakfast is definitely the
way to go! Especially if they are filled with peanut butter, bananas, flax
seeds, and oatmeal. No eggs or milk here either. These are tasty little morsels
(if I do say so) seeing as how I keep popping them in my mouth and I'm
surprised there are any left. My intention was to make them for my son for his
breakfast at school and he will have them for one day but I can't guarantee
more than that.

Deep Dish Coffee & Chocolate Chip Cookies
I've been missing some time on my blog
lately but I've been busy at home. This past weekend was my birthday and so I
was relaxing while my husband baked me a cake and spending time with family. I
hope everyone else had a great weekend, I certainly did! My birthday cake was
vanilla-chocolate chip cake layers with Ben & Jerry's Cherry Garcia ice
cream then frosted with Cool Whip. It was delicious. :) So did you see my cute little magnifying glass up
near the top of my page on the left? I thought it would be adorable
since I'm "Searching For Dessert" and it would make it easier to connect
with me on various sites.

Easy Lemon Tart
This lemon tart does take some waiting
time but it's super easy to put together. The tart dough is pretty awesome and
is like a giant sugar cookie under the slightly sweet and tart lemon filling.
My favorite part is the caramelized top so it's a little crunchy when you pick
up a bite with your fork. I love the crunch. It's one of the reasons people
love creme brulee, the sugar on top.

Strawberry Cupcakes with Cool Whip Frosting
I've always found strawberry cupcakes to
be particularly challenging because it's usually pretty hard to get a good
strong strawberry flavor. I've seen a lot of recipes that use strawberry jell-o
and that works for some people but I'm not a fan, it's way to artificial for
the flavor. I used food coloring in the Cool Whip as I'm sure you realized
because I really wanted to add color to the frosting but I typically prefer
natural colors (which is why the cupcakes themselves aren't pink). This batch
also only makes about 5 cupcakes so it's perfect for a few people getting
together who want some dessert.

Creamy Watermelon Pops
I received my Zoku pop maker for my
birthday last year and absolutely love it. I have definitely got to start using
it more because it's so convenient and my son keeps asking for more popsicles.
This thing freezes pops in about 7 minutes I think so it's a quick and easy
treat that's made any way you want! Since it's supposed to be 103F here in NC
today these are a great dessert at any time of day :).

Soft Lemon Sugar Cookies
I haven't made cookies in a while and
thought it was about time to do so. So, here we are with these cookies which
are a little crisp on the edges but soft like a cloud on the inside while being
just a little chewy. Chewy cookies are the best (in my opinion of course).
These cookies have a little bit of texture for everyone though with a hint of
lemon flavor. What I love about cookies is that they are portable, individual,
and pretty much everyone loves them. I haven't met anyone who doesn't like
cookies (that was willing to tell me) but I'm sure there is someone.

Frozen Berry Custard (no ice cream maker necessary)
Seeing
as how it always feels like 109F outside (and sometimes is, what is up with that!) then this is the
perfect time for frozen custard. Wait...you don't have an ice cream machine???
That's okay, me either :). I love ice cream but I adore frozen custard with its
smooth, rich texture and flavor. There are several places I been that claim to
have frozen custard and it tastes like ice cream to me but then there are
places with frozen custard that dreams are made of...

Meatless Monday! Grilled Caesar Salad
I
would like to start out by saying that this picture absolutely does not do this
dish justice. I loved the Grilled Caesar Salad and to be quite honest with you,
I have never liked Caesar salad, ever. My husband loves it but we
don't ever have it at home because I've never tried one I liked. I ran across
this recipe and figured I like all of the ingredients in it so there's no

White Chocolate Strawberry Cordials
So, I stepped out of my comfort zone a
little here. I don't think I've made cordials in 10 years but they sounded like
fun so I went for it. I was aiming for something red, white, and blue for this
post but we are rolling with red and white. I actually also made blueberry
cordials just like these but it's been 5 days and the fondant is still only
half way set up so they just aren't ready. How do I know this? I try one each
day. :) Now don't get me wrong, they taste really yummy, but you can still see
some of the fondant that hasn't turned to liquid so it's not that pretty.
