I received my Zoku pop maker for my
birthday last year and absolutely love it. I have definitely got to start using
it more because it's so convenient and my son keeps asking for more popsicles.
This thing freezes pops in about 7 minutes I think so it's a quick and easy
treat that's made any way you want! Since it's supposed to be 103F here in NC
today these are a great dessert at any time of day :).
The best part is that they're made with
fresh watermelon and 1% milk so they aren't bad for you! My original intention
was to put some sweetened lime juice at the bottom of the pop (last in the
mold) to make it look more like a watermelon but I realized that wasn't going
to happen when I realized I was out of lime juice. Oops.
Creamy Watermelon Pops
Makes 4-6
Ingredients:
- 1 ½ cups frozen watermelon
- ¾ cup milk (I used 1%)
- 1 ½ teaspoons vanilla extract
- 1 ½ teaspoons lemon juice
Directions:
1. Combine all ingredients in a food processor, mix about 20-30 seconds until the mixture is completely blended and smooth. The mixture will be foamy.
2. Divide evenly in a pop maker and follow manufacturers directions or divide into paper cups and freeze partially before putting in sticks. If the mixture starts to become unfoamy because you have to wait between pops solidifying then you may want to process it again to make it foamy again otherwise the foam will settle and your pops will be slightly different shades and textures.
