I
know it's only September (even that's almost over) but I'm already thinking
about Christmas treats. This pie would also be great for a Thanksgiving
dessert. It's warm, comforting, a little different than the usual pies. The top
is nice and crisp with a hint of sweetness from a sprinkling of sugar. The
inside is warm and soft, but firm like an apple pie should be. The pumpkin and
spices add a lovely harvest flavor.

Pumpkin Cheesecake Dip
Dips are great for entertaining guests because they are usually easy and can be made ahead. Dessert dips are even better! This is a super simple dip that people will love and will ask for the recipe. It's also made with lowfat ingredients and everyone knows pumpkin is healthy :). I'm sure that you can come up with even more ideas of dippers to serve it with than I can!

Meatless Monday! Roasted Garlic Potato Soup
It's officially fall and
for some people that means more soup, more pumpkins, more apples, more of lots
of things reminiscent of autumn. Yay! I love it when it starts to get chilly
outside and I can wear warm, cozy sweaters and corduroy pants. In anticipation
of fall I made this potato soup which is sure to warm you right up! I almost
always serve soup with bread of some kind because I love to dip it in the soup.

Lemon Sugar Cookies
Lemon sugar cookies are one of my favorites. I absolutely love that hint of tart in a sweet cookie. I'm also a pretty big fan of lemon filled sandwich cookies, if I do say so. These are quick and easy to make in addition to being simple and delicious! These cookies are chewy on the inside and a bit crisp on the edges, which is lovely I think.

Slow Cooker Stuffed Onions
Meatless Monday is back again and this week I made stuffed onions. How much fun is that? I remember growing up my mom used to make stuffed peppers a lot. One of the great things about stuffed onions (or stuffed peppers) is that you can toss in whatever you have on hand. These are also made in the slow cooker so once the initial prep is done then it's actually done and you can enjoy the rest of your day. Feel free to make this with actual ground beef too!

Mini Spice Cakes and Yay and Yay!
You all know I'm a huge
fan of individual desserts. These are perfect for a small group of people and
the presentation is so pretty because they don't need to be cut to be served.
There are so many different fun ways to mix up this recipe. I kept thinking of
ideas as I was making them. It's almost fall, which is super exciting for me. I
love fall because of all of the flavors that typically accompany it. These
adorable little cakes have just a hint of apple flavor in them and a soft spice
flavor reminiscent of autumn.

Tofu & Bean Chili
I know what you're thinking. Why would I put tofu in chili? Just make vegetarian chili with beans. I could, you could, it would be delicious too! But the tofu adds something to the chili. But, this chili is the best the next day. Don't get me wrong, it's really good (to everyone who tried it at least) the day it's made. But the next day? The tofu sort of becomes part of the chili and it's not as prominent. I did do something different though. I froze the tofu first to get a different texture.

Fresh Peach Tart
It's the end of peach
season but there are still some good ones that can be found in the store. This
tart is a lovely way to use them and feature their bright and sweet flavor.
Summer fruits are so much fun to sprinkle on tarts and other desserts. Once fall
comes then everyone starts turning to baked pies and cobblers. I've been seeing
more and more apple recipes popping up online, including some apples stuffed
with cinnamon, sugar, and raisins that are cooked in a slow cooker. That sounds
good to me to about now.
