Peanut Butter & Banana Oreo Bites



With only 4 ingredients these little cups are so easy to make and addicting to eat! When I took this picture there were maybe eight left for pictures. The recipe makes three dozen. Even my son loved these and kept asking for just one more. I almost venture to say these are healthier because they have banana in them. Anything with banana is healthy right? :)


The name says it all about the ingredients. The best part is that there are so many different types of peanut butter that can be used...crunchy, dark chocolate, honey flavored, the possibilities are endless. On the other hand, there are a million kinds of Oreos now that could be used too! What is important to keep in mind is that the banana is a strong flavor in these. I taste it more than the peanut butter even. So if you change the Oreo flavor, keep the banana background in mind. I'm not really sure how mint would work :).

I have pictures and it tasted delicious but it was not pretty (and that's being generous). The recipe needs more work. So, here we are with this delicious recipe instead!


Peanut Butter & Banana Oreo Bites
Makes 36

Ingredients:
- 12 Oreos (or chocolate sandwich cookies with vanilla cream)
- 1 banana (about 7”-8” long)
- ¼ cup peanut butter
- 11-12 ounces semi-sweet chocolate chips

Directions:
1. Melt the chocolate over a double boiler or in the microwave, stir until smooth. Be careful not to overheat the chocolate. Line 3 mini muffin pans with paper liners. Spoon the melted chocolate into the paper liners and coat the sides and bottom using the spoon. Don’t overfill the cups. Reserve the remaining chocolate. Chill the pans in the refrigerator to harden the shells.
2. In a food processor, blend the Oreos, banana, and peanut butter until smooth, scraping occasionally. Once the shells are hardened, spoon the filling in, leaving enough room at the top of the cup for more chocolate to seal the filling into the cup.
3. Re-warm the chocolate if necessary, then spoon onto the filling in the cups and smooth the tops. Chill until hardened.
