Secret Recipe Club - Ultimate Peanut Butter Oatmeal Cookies



I just want to say really quick that I realize my header is broken :(. I seriously need to fix it but haven't had time so please don't think I've just abandoned my blog or that the picture is the new look.

It's Secret Recipe Club Reveal Day again! These Ultimate Peanut Butter Oatmeal cookies are amazing! They're really easy to mix together, quick to bake, and delicious as you're eating them.


As I said, this is reveal day for my group in the Secret Recipe Club. If you would like to find out more, then click here. The idea is that all of the members are assigned a blog (secretly of course!) and each member can peruse their assigned blog to find something that they would like to make, or several things to make in the future. The assigned blogs are kept completely secret until the reveal day and time, then you get to see who had your blog, and you get to post about what you made from your assigned blog. It's a lot of fun, and a great way to discover new blogs and recipes. 



This month I was assigned to Sweet As Sugar Cookies which is written by Lisa. I have followed her blog for well over a year now and was thrilled when I was assigned to her blog. She has so many fantastic recipes that I couldn't wait to pick one to make! I thought about making Bill's Big Carrot Cake or the Chocolate Mint Crackle Cookies but ultimately decided on the Ultimate Peanut Butter Oatmeal Cookies. They're so good I thought that I would use "ultimate" twice. They're crunchy on the edges and soft in the middle!


Ultimate Peanut Butter Oatmeal Cookies

Ingredients:
1/2 c. unsalted butter
1/2 c. peanut butter
1/2 c. granulated sugar
1/2 c. light brown sugar
1 egg
1 tsp. vanilla
3/4 c. flour
1/2 tsp. baking soda
1/4 tsp. baking powder
1/2 tsp. salt
1 c. rolled oats

Directions:
1. Preheat the oven to 350F. In a mixer, cream together the unsalted butter, peanut butter, granulated sugar, and light brown sugar. Add the egg and vanilla, then blend for about 30 seconds on low speed.
2. Add the flour, baking soda, baking powder, and salt to the butter mixture. Mix the ingredients together until just blended. Stir in the rolled oats.
3. Scoop out tablespoon size portions evenly spaced on a baking sheet. Flatten cookies slightly (I have been known to spray the bottom of a glass with a bit of non-stick pan spray and use that to flatten cookies).
4. Bake for 10-11 minutes or until the cookie are just firm to the touch.
