Chocolate Chip Fudge Brownies for SRC


I've made a fair amount of brownies recently but when I saw these Chocolate Chip Fudge Brownies on the blog that I was assigned to for the Secret Recipe Club then I had to make them. They taste fluffy like a marshmallow but fudgy like a brownie should be (in my opinion). I did top them with a Chocolate Marshmallow frosting which was a lovely addition. Then there's creamy, slightly sweet, soft, and fudgy all in the same bite!

The assigned blogs are kept completely secret until the reveal day and time, then you get to see who had your blog, and you get to post about what you made from your assigned blog. It's a lot of fun, and a great way to discover new blogs and recipes. 



This month I was assigned to Dancing Veggies. Amanda's blog is all vegetarian with some vegan and gluten free recipes as well. There's so many to choose from that I had a hard time deciding. I thought about the Cinnamon Waffles with Cinnamon Apples or the Sriracha White Bean Dip but ultimately I decided on the Chocolate Chip Fudge Brownies. I really liked them! I did make a change though but it was because I felt I needed to. In the original recipe (which doesn't have frosting) you bake the brownies halfway, sprinkle with chocolate chips, then bake until done. When my brownies were done then all my chocolate chips on the top were burnt :(. So I scraped them off (which worked surprisingly well because of the crunchy, smooth top) and decided to make frosting to cover the error.  I made Chocolate Marshmallow frosting because the brownies reminded me of a marshmallow with the texture, which I loved. Chocolate Chip Fudge Brownies
Makes one 8” x 8” pan

Ingredients:
- 1 ½ cups chocolate chips, divided
- 10 tablespoons unsalted butter
- 1 ½ teaspoons sour cream
- 1 ⅔ cups granulated sugar
- 3 whole eggs
- 2 teaspoons vanilla
- 1 cup all-purpose flour

Directions:
1. Preheat oven to 375F. Lightly grease an 8” x 8” pan or line with non-stick foil, set aside.
2. Melt 1 cup chocolate chips and 10 tablespoons butter over medium-low heat, stirring frequently until it begins to melt, then stirring constantly until almost smooth. Stir in sour cream until smooth. Remove from heat and set aside.
3. In a mixer, cream the sugar and eggs for 3 minutes of high speed. Add the vanilla and mix an additional two minutes. Pour the chocolate mixture into the mixer with the sugar mixture and blend until smooth. Stir in the flour until just blended. Add the remaining ½ cup chocolate chips.
4. Pour the brownie batter into the pan and smooth the top. Bake for 45-55 minutes or until a toothpick inserted just off center comes out clean.
